Two days in a row? Crazy, right?
Since I’ve got a few more things on my plate these days, I will only be posting three times a week, unless something comes up. Yesterday, something came up, so I wanted to share.
Confession: I ended up not having my kale caesar salad for lunch and things went downhill from there. We went out to eat for work. I had a grilled shrimp and smothered greens pressed sandwich, as well as red velvet birthday cake when I got back to work. Then, not even paying attention, I ate the rest of my tortilla chips from Sunday evening.
Now I see why they say to throw out the junk food. Not only is it tempting, but sometimes you get in to it mindlessly.
Oh well! I knew this challenge was not going to be easy. I don’t want to start over just because I messed up. If I did that who knows how long this would last. So I’m treating yesterday as a lesson, not a setback.
New day, new start. So let’s try this again.

Breakfast: 1/2c oatmeal, 1 small green apple, chopped, 1c unsweetened coconut milk & 1tbsp cinnamon

Snack: the other half of this juice from Whole Foods

Lunch: kale caesar salad
For dinner, I’m thinking roasted sweet potato in extra virgin olive oil. Whether or not I add ketchup will depend if I get into the king cake today ;)
