{Recipe}: Sour Cream & Onion Dip … with Greek Yogurt.

I got a little creative in the kitchen last night. Well, not too creative because I was inspired by another recipe, but still … you know what I mean.

One of my favorite junk food treats are chips. In particular sour cream and onion chips. Ugh. I’m drooling just thinking about them.

Last night I was craving chips, but made a promise to myself that I could only eat what I have in my apartment this week, unless I’m out with friends. So I thought long and hard about what I had at home … sweet potatoes, a red onion and 0% plain Chobani greek yogurt, which I swear tastes like sour cream. So I decided to make my own sour cream and onion dip to top my roasted sweet potato. 

Swoon.

Sour Cream and Onion Dip

Inspired by Eat, Live Run.

Ingredients:

1 container 0% plain Chobani greek yogurt

1 tbsp olive oil

1/2 red onion

1 tsp garlic

1/2 tsp ground black better

Directions:

1. Sautee the onions in the olive oil until they are lightly caramelized.

2. Pour the caramelized onions, garlic and black pepper into the yogurt and stir until it is all incorporated.

3. Chill for 30 minutes {or longer} as you roast your sweet potatoes.

It wasn’t as thick as actual sour cream, but it sure did taste like store bought sour cream and onion dip … and on top of the potatoes?! Let’s just say I was in heaven last night. It was everything I wanted and more: cheaper than spending more money on a bag of chips, healthier, not as processed and caused a foodgasim in my mouth. Happy Liz.
