Happy Wednesday, y’all!
This weeks seems to be going by painfully slow, but at the same time I’ve been having a lot of fun! Hornets game last night {yay for the W!}, dinner with a friend who moved home later this week and a wedding this weekend.
Plus the weather has been absolutely beautiful.
Did I mention how much I love October?
Back to the fact that it’s Wednesday …
Today all I have is breakfast for y’all. Don’t worry, it’s totally drool worthy AND there is a recipe at the end.

3 egg whites and 2/3 c chopped sweet potato, tossed in cooking spray and cooked at 425 for 20 minutes … topped with ketchup.
I really need to let go of ketchup.
My breakfast was chased down with a homemade pumpkin spice latte.
Slurp.

My pumpkin spice latte!
It such a super easy recipe that was inspired by Tone It Up’s pumpkin spice latte.
Directions:
- Start brewing your coffee.
- Mix 1/2c coconut milk, 1 tbsp canned pumpkin puree, 2 pinches of nutmeg, 2 dashes of cinnamon and 2 dashes of pumpkin pie spice.
- Stir to start breaking up the pumpkin.
- Heat the mixture in a microwave safe mug for 30-45 seconds.
- Stir again when it’s done to incorporate the pumpkin into the milk.
- Pour in your coffee.
Enjoy!
See how easy?! Added bonus: there is no sugar, you get to keep the 5 bucks you would have spent at Starbucks in your pocket, AND you have more calories to use throughout the day … perhaps on a glass of vino ;)

Do you use the liquid egg whites or the whites from a real egg?
I use egg whites from real eggs. Liquid egg whites don’t agree with my stomach and they just plain creep me out! Haha.
