{Recipe}: Eggplant Chickpea Over Stuffed Peppers

The other night my friend Niki was coming over for dinner and True Blood. We are both a little behind this season, so we have been catching up together.

It’s always nice to have a friend with you while drooling over the beautiful men of True Blood …

Enough drooling over men. Now it’s time to drool over food.

Heather over at For The Love Of Kale posted a recipe a few weeks ago I had been dying to try, Eggplant Chickpea Over Stuffed Peppers.

All the ingredients sounded like they would result in a foodgasim in my mouth and I wanted it!  I drooled over her photos and ingredients for a few days bidding my time until it was my turn to try these beauties.

I went directly to this recipe when I knew I was having a friend over for dinner.

Eggplant Chickpea Over Stuffed Peppers

Slightly Adapted From: For The Love Of Kale

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients{Serving Size: 2}:

  • 1 large red bell pepper
  • 1 cup eggplant
  • 1 cup chick peas
  • 1 tbsp coconut oil
  • 4 handfuls spinach
  • 4 tbsp feta
  • 1 tbsp nutritional yeast
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt & Pepper to taste

Directions:

1. Preheat the over to 425 degrees.

2. In a large skillet, sautee the chickpeas and eggplant in the coconut oil for five minutes.

3. Add the nutritional yeast and sautee for 3 minutes, stirring occasionally.

4. Add the spinach, basil and garlic powder and stir occasionally for another 3 minutes.

5. Pour 1/4 of the mixture into half of an open faced pepper and top with 1 tbsp feta.

6. Pour another 1/4 of the mixture and again top with 1 tbsp of feta.

7. Repeat steps 5&6 for the other half of the pepper.

8. Place the stuffed peppers on a baking sheet and bake for about 15 minutes until the edges begin to blacked.

9. Remove from the oven and devour!

 

Now the directions say to devour and, well, that’s because that’s what Niki and I did. 

How amazing do these peppers look?
