This past weekend, I hosted a brunch before we headed out to Red Dress Run.
Me hosting a brunch? Surprise, surprise!
Instead of my usual spread of eggs, biscuits, bacon and sausage, I wanted to recreate the casserole we had a few weekends ago at Wolfe Bay.
I couldn’t find the recipe I was looking for, but no worries there because I have an awesome memory!
Hashbrown Casserole
Credit: this is NOT my own recipe, but I don’t know who to give credit to.
Prep time: 5 minutes {and can be prepped the night before!}
Cook time: 40 minutes

Ingredients:
1 pack of frozen hasbrowms
1 can of fat free cream of mushroom soup
2 small containers of light sour cream
1 bag of shredded cheese
1 pouch of bacon
green onions {optional and I forgot!}

Directions:
1. Preheat your oven to 400 and spray down a large rectangular baking dish
2. In a large bowl, mix the hashbrowns, sour cream, cream of mushroom soup and half of the cheese and then pour the mixture into the baking dish and cover with foil.
{Note: if you are prepping this the night before, put it in the fridge at this point and complete the rest of the steps the following morning.}
3. Place the foil covered dish in the oven and bake for 30-35 minutes, until the sides start to bubble.
4. In a large skillet, cook all of the bacon until it is nice and crispy. Once the bacon is cooled, crumble it up.
5. Once the casserole has cooked the 30-35 minutes, take it out, remove the foil and top with the rest of the cheese and the bacon.
6. Cook for an additional 5 minutes without the foil.

Um yea, how EASY is that?
Not only is it a super easy breakfast/brunch recipe, it tastes absolutely amazing. Like Elizabeth and I went back for thirds amazing.
I brought the leftovers to my parents house that Sunday. My dad reported back that he, my mom, sister and brother-in-law devoured it.
I don’t blame them. This casserole is full of flavor, creamy and everything you could want in a breakfast. Loveeee.
