Hey y’all! Happy What I Ate Wednesday! This Wednesday, I’m just going to dive right into it …

I have a few things to say about this meal …

1) Are you just as excited as I am that cherries are back in season?? Totally made my day and was exactly what I needed

2) How fun of an idea to use collard greens as a wrap? The brilliant Tone It Up ladies sparked this idea. I absolutely love it!

3) I made two small turkey wraps instead of one large one. Gives me the illusion I’m eating more and it forces me to slowly eat.

M4: unpictured cup of carrots & the rest of my muscle milk shake (there is only about 1/3 left. I’ve been milking this since yesterday)

M5: 3 1/2oz of rotisserie chicken & roasted tomatoes (recipe to follow)

So those are my eats! Pretty clean, huh? I’ll admit there is a strong likelihood I’ll have two mini Hershey bars. I’ve embraced a small cheat everyday rule that has been really working for me. I’ll share these deets later with y’all!

What have you been eating lately?

Are you, like me, super excited about cherries being in season?!

Xoxo,

Ps thanks for the kind words yesterday! Y’all are pretty amazing. Not sure if I can say thank you enough.

Love cherries!!! So excited that they are back!

Can’t wait to see the roasted tomato recipe – my mom and I love roasting veggies. We keep coming up with new things to roast. Our latest find – chickpeas! Heather from For the Love of Kale told us how easy it was and we tried it and were sold. Have you roasted those before?

The runny egg on the sweet potato looks/sounds strangely perfect. I need to try it!

Collard wraps are fun indeed :) I’ve ordered them out before but haven’t had them at home yet because I usually do salads for my leaves haha!

  3. Ohh I love the idea of wrapping turkey in a collard leaf! Especially if you add a little mustard too… or maybe even a little cheese ;) And these all look like great clean eats! My eating has gotten out of control lately and I’ve seen my body change because of it. Hate that. Now I’m working on cleaning it up big time and reducing my portion sizes and cutting back on so many indulgences!

  4. Looks like you are doing so well with “eating clean” and making it taste good too! Healthy food is both amazing for you and flavorful too, and you are showing that well :)

Must try this Muscle Milk! And yes, so excited for cherry season!!

  6. I love wrapping deli meat in lettuce or some sort of greenery, it the best!

  7. I can’t lie– i’m definitely excited for the cherries, but I’m even MORE excited for the blueberries being back!!!!!!!!!!! woo!!!!!

  8. I am SO excited for cherry season–they are just so yummy (and pretty!).

I have never made lettuce (or collard) roll ups but I am clearly missing out! These look amazing. I actually have only had collard greens cooked–I should totally try them raw!

Also, I totally just discovered the amazingness that is roaster tomatoes–SO GOOD! Holy smokes–I am obsessed!
