First and foremost, thank you to all the lovelies that were my Valentine yesterday! Y’all made this girl’s day!
Now, for those of you new to my blog, based on this title, you may think I’m a creep. I swear I’m not. For those of you who are not new, this isn’t exactly news ….
I have an obsession with brussels sprouts.
I *may* have had them for dinner last night, breakfast this morning and packed the rest for lunch today. Ok fine, there is no *may*. I did have them for dinner last night, breakfast this morning and I packed the rest for lunch today.
See? Obsession!
I’m sorry, if there is food that I’m going to be obsessed with wouldn’t you want it to be something healthy? Yea, that’s what I thought!
Thanks Jenn for hosting this WIAW, love your veggies party!
Of course, I have to keep my eats in line with Tone It Up!! So here is what I plan to eat today, except that my dinner will be different, due to the fact I don’t like to have chicken twice in one day and I’m out of brussels sprouts :( Nooooooo!!!
M1: Roasted brussels sprouts with an egg white & mushroom omelet
M2: Grapefruit & coffee with almond milk
M3: Grilled chicken & roasted brussels sprouts
M4: thinkThin bar
M5: {last night’s meal} Grilled chicken with sautéed carrots & steamed brussels sprouts.
What is so great about brussels sprouts? For me, it’s the taste, the fact that they are high in fibers, filled with antioxidants, and are loaded with Vitamin A & C. Need I say more?
I know there are some who are iffy about the taste, so here are some recipes I’ve come across on some of my favorite blogs that add lots of other flavors.
Brussels Sprouts with Bacon, Dried Cherries and Israeli Couscous
Roasted Brussels Sprouts – this is a great recipe for first time roasters who aren’t used to the brussels sprouts taste! It uses more than the olive oil, salt & pepper I use.
What are your thoughts on brussels sprouts?
Have you eaten something amazing lately?

Thanks so much for the link love!!! I am brussels OBSESSED too. I dont THINK Ive ever had them for breakfast – but once I had them for lunch and dinner two days in a row – does that count?! xoxo
Yes, it counts! Haha.
There is something about brussels and eggs that I love .. maybe how you like sardines ;)
Ahhh so many brussel sprouts… but this is a good thing :) They are so so tasty, especially the way your prepared them! I would just be one gassy fool after, so I couldn’t be around people for a while. (TMI? For sure) haha
Not at all! Haha. I almost said that if I had all three meals in one day! Never TMI :)
I like but am still a little scared of Brussels … One bad experience is all it takes! But broccoli is a different story – that I could eat at ever meal! And I see that kombucha lurking behind your breakfast!
Yes … love Kombucha!
Love brussel sprouts! My mom made some last night for our little family Valentine’s dinner, and she let me take home the leftovers!
I LOVE Brussel Sprouts! i usually steam them and put yogurt butter on them yummmmmm
your recipes look bomb tho!! Will be trying them soon!
bwahaha I love this post! You already know how I feel about my brussels sprouts! ;) <3
YES! I still need to try putting ketchup on mine!
I’m actually new to brussel sprouts and have had them a few times recently and realized how good they are! I’ve only eaten them roasted so I’m a little apprehensive I won’t like them another way! But that recipe for caramelized ones sounds great!
I think the caramelized recipe sounds pretty amazing too!
I absolutely adore roasted brussels sprouts! ^^ I think that every kid would eat them if they were prepared that way!
Oh my word, these look awesome!!
Brussel Sprouts are PERFECTION! Oh goodness! Nothing is better than a good roasted sprout! I am dying to try one of those shaved brussel sprout salads! I will eat them in any form! Sadly, Chase hates them, but it works out because it means there are more for ME!
I am on a major sweet potato and broccoli kick. I cannot get enough!
I JUST got over my sweet potato kick .. until I finished off the sweet potato tots last night! Opps … I see my diet next week consisting of sweet potatoes, brussels sprouts and kale! Haha. Love it!
