So yesterday evening was a bit of a crazy evening. I swear it is too hard to get back into the swing of things after a little break!
Cookies had to be made for the Great Foodblogger Cookie Swap ’11. For my three lucky bloggers I made some gingerbread latte cookies. Not even thinking I packed the cookies up WITHOUT taking a picture!!! Grrr.
December 12th we all have to post our recipes, so now I have to make another batch for the picture. Hmmm … maybe I will send some to you readers as a Christmas gift? Thoughts?
Another little issue I had with last night was that New Orleans’ weather decided to turn to FREEZING, and I hadn’t turned on my heat. In my apartment I have “window units”, however, because I don’t have windows, just french doors to a patio and sky lights in every room, my units are about 12 ft high. This means climbing is required to turn on the heat.
By 10:00 pm I was too tired, so I went to bed with 2 sweatshirts, tights, sweatpants, slippers, and 4, yes 4, blankets. I still woke up shivering throughout the night. Needless to say I turned on the heat first thing this morning!
Oh! And last night for some reason I was STARVING when I got home from work. I usually wait a bit until I eat, but that didn’t fly yesterday.
First, I ate all of the oysters out of my leftover oyster dressing. Sometimes I’m glad I live alone so I can get away with stuff like this! haha. This is all that remains …
I was clearly still hungry after the oysters, so I went back to the fridge to see what I had … leftover twice baked potatoes, light sour cream and White Girl Salsa. This was my creation. It was a foodgasim.
Salsa Topped Potatoes
prep time: 4 minutes
cook time: 2 minutes (or 5 minutes if you used a baked potato)
Ingredients:
1/2 c leftover twice baked potato (or 1 medium baked potato)
1.5 tbsp light sour cream
2 tbsp White Girl Salsa (or salsa of your choice, y’all know my love and obsession for White Girl)
Directions:
1) Mix the sour cream and salsa.
2) Re-heat your potatoes.
3) Pour your mix over the potatoes.
Clearly I liked it. A lot. Like I said before. Foodgasim.
