Hey guys! How are y’all today? I have a crazy busy day ahead of me, so I apologize now for the short post.
Apple Spiced Coffee Cake
prep time: 20 minutes
cook time: 35 minutes
Ingredients (yields 1 cake in a 7 1/2 inch ring mold):
1 package Namaste GF Muffin Mix
1/4c butter (or margarine)
1/8c fat free milk (or almond or soy milk)
1c plain yogurt (or soy yogurt)
1/2tsp ground cloves
1-2 apples, enough to yield 1c of chopped apple
1/3c splenda brown sugar
1/2 tsp cinnamon
Preheat your oven to 350. Then start chopping up your apples, until you get about a cup of them. Set them aside.
In a separate bowl or in your Kitchenaid blender bowl, add the Namaste muffin mix, eggs, butter, ground cloves, cinnamon and nutmeg and start mixing.
Slowly add in the milk, as needed, to the mix.
Right as everything is all mixed in (and smelling amazing), add in your apples and blend until incorporated. Make sure to not over blend.
Pour the mixture into a greased ring mold (or any other pan).
Take the brown sugar, cinnamon and pecans for the topping and blend them together. I used my magic bullet.
Spread your crumbled topping over the cake. Put it in the oven and let it bake.
Allow the cake about 30-35 minutes to bake. I took mine out at 30, but it needed the additional 5 minutes.
Sit back and enjoy the heavenly taste of fall. I’m not kidding. I usually eat a piece of what I cook before I give the rest to my family and friends. This go round? I ate half the cake. No lies. It is THAT good. The spices, cooked apple, moist cake and crumble on top. The flavors are spot on!
